HOTCHA SRIRACHA PEPPER



Bright red, multi-purpose Sriracha hot sauce is made from red chili peppers, garlic, vinegar, salt, and sugar. This special jalaperio variety grows 2-3 feet tall and matures to crimson red to develop red hot heat for homemade sriracha. Red jalaperios are hotter than green with a higher level of capsaicin, the heat range can hit 8000 Scoville units. Use a little or use a lot of this pepper to give hot sauce the earthy taste and heat level of this pepper you are looking for.

Easy Sriracha Recipe
1 ½ cups chopped Jalaperio peppers
3 or more garlic cloves peeled (adjust to taste)
2 tablespoons brown sugar 2 teaspoons salt
¼ cup white vinegar
Chop peppers and garlic in food processor until a smooth paste, add remaining ingredients and process until a smooth sauce. Add water to mixture if necessary, to reach desired consistency. Pour mixture into clean glass jar, refrigerate. Strain Sauce if desired for smoother texture.
